Mullica & Kevin Took Us to the Islands (2018)

On a sunny day in April, we set up in the kitchen of 501 Union in Gowanus. The menu we put together was just as fun as Mullica and Kevin. We discussed finding ways to incorporate both Mullica’s Thai and Kevin’s Guyanese cuisines. After the ceremony, we sent out lots of bite-sized snacks during the cocktail hour: crunchy spring rolls, sticks of chicken satay, and comforting Jamaican beef patties. As guests sat down for dinner, they were greeted with Sriracha bottles at every table and colorful peanut slaw.
Dinner was served family-style with platters piled with roasted chicken with herby oil, vegan lemongrass ‘beef’, pineapple fried rice, and mashed yucca. It was so rewarding to see everyone laughing and passing plates down the long tables. What made it even more special: Mullica designed the signs, menus, and canvas banners herself! Classy, clean, and verdant with leafy table runners.
When the music started getting louder, the biggest surprise arrived. The garage door opened the front of the venue and a Van Leeuwen truck drove into the space next to the dance floor for all you can eat ice cream cones.

The Wedding Menu

Our chicken satay skewers were a mix of breast meat and thigh. The key is the satay sauce made with freshly pounded lemongrass, shallot, turmeric, garlic, coriander, and a little bit of Thai chili.

One of our staples for cocktail hour is our house-made miso hummus, a vegan dip for crudites, crackers, and bread. We served it with rainbow carrots, Easter egg radishes, cucumber, and rau dên (known as amaranth leaves).
Our colorful slaw was a mix of red and green cabbages, edamame, cilantro, red bell pepper, and sides of lime. We served a pourable peanut dressing on the side.
A Party Tip
When planning a party, think about the areas of the venue where people will gather because it can be an opportunity to surprise and delight. At 501 Union, we knew guests would line up at the bar for drinks after the ceremony. We strategically placed snackables, easily-grabbed-no-mess items while they wait or happen to walk by. At each corner of the bar, we had vases of Philippine chewy fruit candy and plantain chips. During cocktail hour, you can also put out bowls of snack mix or popcorn on high-tops or in nooks where you know people are likely to sit and chat.
